Froutalia


Ingredients
  •     1 cup olive oil
  •     1 sausage
  •     2 potatoes
  •     4 eggs
  •     Salt
  •     Pepper
  •     1 cup of grated cheese

Directions

1. Thinly slice sausage.
2. Chop potatoes to strips
3. Fry potatoes and sausage slices in a frying pan, but do not allow enough time for the to become crisp.
4. In a bowl beat eggs well.
5. Add salt, pepper and grated cheese to the eggs and beat well.
6. In a clean frying pan add a little olive oil and heat the pan to medium heat.
7. Pour the egg mixture in the pan and fry over medium heat.
8. Cook until the omellete thickens and turn over.
9. Remove the omellete from the pan and serve hot.

Note: Froutalia is served on the island of Andros. Best with country style sausages.

Strapatsada [ Scrambled eggs with fresh tomatoes ]



Ingredients
  •     400gr (1 lb) tomatoes (ripe)
  •     4 eggs
  •     Salt
  •     Sugar
  •     Olive oil
  •     Pepper
  •     1/2 cup fresh milk
Directions

1. Chop tomatoes to small pieces and set aside.
2. Beat eggs well and set aside.
3. Add salt and pepper to the egg mix and stir.
4. Add 1/2 a cup of fresh milk to the egg mix and beat well.
5. In a frying pan add the chopped tomatoes, sprinkle a touch of sugar over them and cook for 3-5 minutes over a medium fire while stiring.
6. Once most of the juice form the tomatos has evaporated, add them to the egg mix and stir gently.
7. Add a tablespoon of olive oil in the frying pan and shake it well so that it will cover the whole surface.
8. Pour in the mixture and cook over a low-medium fire stiring the mix with a wooden spoon.
9. Do not allow the mixture to overcook (crisp).
10. Remove from heat and serve hot.

Note: Goes nicely over toasted bread.

Feta Omelette



Ingredients
  •     Salt
  •     Olive oil
  •     1 onion
  •     250gr (1lb) Grated feta cheese
  •     4 eggs
  •     Pepper

Directions

1. Chop onion to slices and set aside.
2. Beat eggs well and set aside.
3. Add salt and pepper to the egg mix and stir.
4. Add the grated feta cheese to the egg mix and stir well.
5. Saute onion in a frying pan till golden-brown.
6. Add sauted onion to the egg mix and stir.
7. Grease frying pan with some oil and heat to medium-high heat.
8. Pour the egg mix in the frying pan and cook over a medium-high heat.
9. Turn once over and cook for a couple of more minutes.

Serve hot.

Mixed omelette


Ingredients
  •     1 green pepper
  •     100gr (0.25) peas
  •     Pepper
  •     1 country style sausage
  •     Salt
  •     3 eggs
  •     100gr (0.25) grated gruere cheese
  •     2 medium potatoes
  •     Olive Oil
  •     1 large onion

Directions

1. Slice sausage and onion into thin pieces
2. In a frying pan saute onions along with the sausage using a little bit of olive oil. When ready remove from pan and set aside.
3. Cut potates into strips and fry in the same pan after adding some more olive oil. Remove from heat when potatoes are soft.
4. In a bowl beat 2 eggs adding some salt and pepper.
5. Chop green pepper into thin slices and add to the bowl with the beaten eggs, adding also the onions and sausage as well as the potatoes and the peas.
6. Mix gently together while slowly adding the grated cheese, but do not beat.
7. Add more olive oil to the frying pan, if required, and pour in the egg mix.
8. Allow time for the omelete to cook, over a medium heat, and fold it over using a spatula.
9. When brown on one side flip it over till other side is brown too.
10. Serve hot.

Note : Serves two.

Spinach Omelette



Ingredients
  •     Olive Oil (or vegetable oil)
  •     1 clove of garlic
  •     3 strips of bacon
  •     Salt
  •     Black pepper
  •     1/2 cup of Spinach puree
  •     3 Eggs
Directions

1. Beat eggs in a mixing bowl and add pepper and salt.
2. Chop beacon into small bits and add it to the mix along with the spinach.
3. Crumble feta to small pieces, add to the bowl and mix well.
4. use some olive oil to grease and heat (to medium heat) a frying pan. Pour the omelette mixture in the pan and cook for about 5 minutes.
5. Fold the omelette in half and serve hot.

Note : Serves 1 person.

Sfouggato


Ingredients
  •     Bread crumbs
  •     1 green pepper
  •     Flour
  •     5 eggs
  •     Olive oil
  •     Dill
  •     Dried mint
  •     pepper
  •     salt
  •     5 spring onions
Directions

1. Wash and grate the spring onions.
2. Wash and thinly chop half a green pepper.
3. Warm up a deep frying pan with a touch of olive oil and then stir-fry the onions and peppers.
4. Add half a cup of water, salt, pepper and allow for the water to evaporate.
5. Remove from the heat and add a pinch of mint and a pinch of chopped dill.
6. In another bowl, beat the eggs (preferably with an electric mixer) adding 1 teaspoon of flour and 2 teaspoons of olive oil while beating them.
7. Add a little bit of olive oil and place the frying pan over the heat, turning it to high. Once the pan has heated sufficiently, add the egg mix, stirring while it sets.
8. Once the egg mix has set, fold it in half, reduce the heat and cook well on both sides.
9. Remove from heat and allow a little time to cool before serving.
