Spanakopita (Spinach pie)







Summary
Spinach pie
Servings: 6

Ingredients

  • 1 lb of feta cheese
  • 1 bunch of dill, diced
  • 2 eggs
  • 1 lb fyllo pastry
  • 1 leek, finely choped
  • 1 1/2 cup of olive oil
  • 1 pinch of pepper
  • 1 pinch of salt
  • 2/3 lbs of scallions, sliced
  • 2 lbs of spinach
Directions
  • Clean and boil the spinach lightly.  
  • Strain it well and chop it. 
  • Brown the green onions and the leek lightly in a pot using half the olive oil . 
  • Remove from the heat and add the dill, the eggs, the spinach and salt & pepper.  
  • Oil a pan and spread half the sheets of fyllo sheets. 
  • Spread the spinach mix on top and sprinkle with Feta cheese and cover with the other sheets.  
  • Oil the top and bake in medium oven for about 1 hr.

Spanakorizo [ Spinach Rice ]



Ingredients
  •     60ml (2 ounces) tomato sauce
  •     Olive Oil
  •     Salt
  •     Pepper
  •     2 cups rice
  •     1kg (2 lb) raw spinach
  •     2 medium onions

Directions

1. Chop onions and saute in a sauce pan with olive oil.

2. Slice spinach, add to the frying pan and saute until spinach is soft.

3. Add 2 cups of water in the sauce pan and turn the heat up till water boils.

4. When water boils, turn the heat to low and add the rice and tomato sauce.

5. Cook covered, over a low heat, until the rice is done and the water is absorbed. (Aproximately 15 minutes)

Spanakopita [ Spinach Pie ]



Ingredients
  •     Olive Oil
  •     350gm (.75 lbs) Feta Cheese
  •     2 Eggs
  •     Parsley (Maindanos)
  •     5 Leeks (Prasa)
  •     Dill (Anithos)
  •     750gr (1.5 lb) Phyllo (pastry sheets)
  •     Salt
  •     1.5Kg [3.4 lbs] Raw Spinach
  •     Pepper

Directions

1. Place the spinach in a large bowl and wash it well.
2. Chop spinach into smaller pieces.
3. Squeeze spinach well to drain most fluids.
4. Add 4 tablespoons of olive oil into the bowl and mix with hands.
5. Use a knife or fork to crumble the feta cheese into very small pieces.
6. Add the feta cheese to the spinach in the bowl.
7. Add the 2 eggs and mix with hands.
8. Add a bit of choped parsley, chopped dill and mix with hands.
9. Add salt (This is not simply to season it - so try not to skip this).
10. Add pepper to taste.
11. Grease a baking pan with butter.
12. Add pastry sheets.
13. Take a buttered baking pan and line it with half the pastry sheets, allowing them to fold over the edges.
14. Brush the pastry sheets with olive oil.
15. Pour the spinach mix in the baking pan and spread it evenly over the pastry sheets.
16. Cover with the remaining pastry sheets and brush the top layer with some olive oil.
17. Make 3 diagonal incisions with a knife on the top outer layer of pastry.
18. Sprinkle some a little hot water with your hand over it.
19. Put in medium heat, preheated oven and bake for aproximatiley 50 minutes.

Note: Can be server either hot or cold.

Spanakopita II [ Spinach Pie II ]



Ingredients
  •     5 leaks
  •     4-5 eggs
  •     2 kg [4.4 lb] fresh spinach
  •     1/2 kg [1 lb] feta cheese
  •     1/2 kg [1 lb] spring onions
  •     Puff pastry or phyllo pastry
  •     1 cup dill
  •     1/4 cup rice
  •     1 cup olive oil
  •     1 cube beef stock

Directions

1. Clean and wash the spinach. Sprinkle with salt and let it lay to remove as much water as possible.
2. Cut the onions, leaks and dill and set aside.
3. In a large pot cook the onion in the oil. When the onions are pale and translucent add the spinach and leaks to the pot and simmer stirring constantly until the spinach is wilted.
4. Add the dill. Add the rice. Season with salt and pepper and cook for a little longer.
5. Add the feta cheese and the eggs and mix well.
6. Arrange the puff pastry or phyllo pastry in an oiled baking pan and pour in the spinach mixture.
7. Cover with the remaining pastry sheets.
8. Butter a baking pan and pour in the mixture.
9. Bake in a moderate oven 180C [350 F] for about 30 minutes.

Spinach Omelette



Ingredients
  •     Olive Oil (or vegetable oil)
  •     1 clove of garlic
  •     3 strips of bacon
  •     Salt
  •     Black pepper
  •     1/2 cup of Spinach puree
  •     3 Eggs
Directions

1. Beat eggs in a mixing bowl and add pepper and salt.
2. Chop beacon into small bits and add it to the mix along with the spinach.
3. Crumble feta to small pieces, add to the bowl and mix well.
4. use some olive oil to grease and heat (to medium heat) a frying pan. Pour the omelette mixture in the pan and cook for about 5 minutes.
5. Fold the omelette in half and serve hot.

Note : Serves 1 person.

Spinach and Feta Salad - (Salata me spanaki kai feta)

INGREDIENTS
  • 2 to 3 cups of baby spinach
  • 1/2 cup of apples cut in half, thinly sliced
  • 1/2 cup carrots, grated
  • 1/2 cup or more of feta cheese
  • desired amount of vinegrette dressing

METHOD

Wash baby spinach, add apples carrots and feta, toss. Then just add the dressing and you have a healthy and fresh salad for lunch or as part of a meal.

Cuttlefish with spinach (Soupies me spanaki)

This is a dish traditionally eaten on Clean Monday, which is the beginning of the Lent period before Easter - March 2 this year. Of course, it can also be a delicious side dish at any time of the year.


Ingredients
1 kg cuttlefish
1 kg spinach
1 onion grated
1 tablespoon tomato paste
3 cloves garlic
100 ml olive oil
Salt and pepper

Preparation

Clean the cuttlefish, removing the ink, the eye and the hard white bone inside the stomach. Keep just the white fillet and tentacles.

Cut the fillet into approx. 4cm pieces.

Put the oil in a shallow pan, add the onion and fry for 3 minutes.

Add the chopped garlic and continue frying for another 1 minute.

Add the cuttlefish and continue frying for another 5 minutes.

Dilute the tomato paste in a glass of water, add to the mixture and simmer for 40 minutes.

Add the spinach, along with salt and pepper and stir.


With the pan uncovered, allow the mixture to simmer until nearly all the water is absorbed.

Greek Spinach pie (Spanakopita)

As with cheese pies, there are many types of spinach pie - spanakopita - in Greece.  This one is the more classical spinach pie and can be eaten as a side dish or is a very tasty and nutritious snack by it self. The recipe shows how you can make the filo pastry yourself - it's always tastier than the ready-made stuff.

Ingredients

For the dough
300g all purpose flour
40 ml olive oil
1 tablespoon ouzo
Salt
Lukewarm water – enough to make a pliable dough

For the filling
1 kg spinach
250g feta cheese
6 spring onions
1 bunch fennel – finely chopped
2 tablespoons fresh mint – chopped
2 tablespoons olive oil
Salt – but taste first as feta cheese is salty

For the egg wash
1 egg well beaten with 200ml milk


Preparation

Dough
Place all the dough ingredients in a bowl and knead well for 10 minutes.

Divide the dough into 6 balls of equal size.

Cover them with cling film and let them rest on a lightly floured surface for 1 hour.

Meanwhile, prepare the filling.

Filling
Finely chop the spring onions and put them in a pan with water.

Finely chop the spinach and add it.

Add the mint, fennel and a little salt.

Bring to the boil, stirring well.

Remove from the heat and put the mixture in a colander to drain well.

Press the mixture with a spoon in order to remove as much liquid as possible.

Transfer the mixture to a bowl.

Crumble the feta cheese and add it to the mixture along with the olive oil.

Stir and then set aside.

Dough
When the 1 hour has passed take 3 of the balls and, using a wooden rolling pin, open them into flat circles 15 cm in diameter.

Lightly brush the first ‘filo’ with olive oil and place the second one on top of it.

Lightly brush this one with olive oil and then place the third filo on top.

Sprinkle flour on top.

With a rolling pin open out the dough with the 3 filos until you have a large circle enough to fill a medium size oven dish and cover the edge.



Brush the oven dish with olive oil and place the dough in it, covering the edge.

Take another ball of dough and with a little flour and the use of the rolling pin, open it out into a circle which is the same size as the oven dish, but not including the edge.

Place this in the oven dish on top of the first layer.

Now spread the filling evenly on top of these layers.

Take another ball of dough and again open it out to the size of the oven dish.

Place it on top of the filling and brush with olive oil.

Take the final ball of dough and open it out to the size of the oven dish plus enough to cover the edge.

Place it on top of the others and join the extra at the edge with the edge from the bottom layer, using olive oil so that the edge of the whole pie is nicely sealed.

Brush the top of the pie with olive oil.

Lightly cut the whole pie into square portions, but without cutting down to the bottom.

Brush the pie with the egg wash.

Bake in a preheated oven at 180 degrees Celsius. For about 1 hour, until it has a nice golden brown colour.

Greek Spinach Patties


These patties are really easy to make and are a tasty side dish or snack as well as being extremely nutritious.

Ingredients

1 kg fresh spinach finely chopped
1 bunch spring onions finely chopped
1 medium size leek finely chopped
200g feta cheese crumbled
1 egg lightly beaten
3 tablespoons crumbled rusks
3 tablespoons extra virgin oil
3 tablespoons dill finely chopped
Salt to taste


Preparation

Gently simmer the spring onions and leek in 3 tablespoons of water for 5 minutes, to soften them.

Drain them and let them cool.

Put the spinach in a mixing bowl, squeeze well with your hands and then drain off the liquid that has come out.

Add all the ingredients to the mixing bowl – apart from 1 tablespoon of oil – along with the onions and leek.

Mix them well and add salt, but be careful not to make it too salty, as feta cheese is salty.

Grease a shallow oven dish with the 1 tablespoon of oil you didn’t use.

Form the mixture into round patty shapes – 15cm diameter, 4cm height – and place them in the oven dish. Make sure you leave some space between them as they will spread slightly as they are cooking.

Bake in a preheated oven at 200 degrees Celsius for about 45 minutes.

Don’t worry if they appear soft – they will firm up as they cool.
