Fresh beans in oil



Ingredients
  •     1 onion
  •     Parsley
  •     5 ripe tomatoes (Can use 1 can of chopped tomatoes instead)
  •     1/2 cup olive oil
  •     3 zucchinis
  •     Sugar
  •     1Kg (2 lb) fresh wide beans
  •     Salt
  •     4 potatoes
  •     Pepper

Directions

1. Chop onion and set aside.

2. Chop Parsley and set aside.

3. Chop tomatoes into small pieces and set aside.

4. Chop potates into medium sized pieces and set aside.

5. Chop zucchinis to small pices and set aside.

6. Saute chopped onion lightly in a sauce pan.

7. Add chopped parsley, chopped tomatoes and a pinch of sugar .

8. Add the beans and stir all together once or twice.
 
9. Allow time for the mixture to boil.

10. Once the mixture starts to boil, add the chopped potates and zucchini.

11. Add salt and pepper to taste.

12. Allow about 35 minutes time to boil over a medium-low heat.

Serves aprox. 4 people.

Arakas Kokinistos (Green peas in tomatoe sauce)



Ingredients
  •     Salt
  •     Pepper
  •     150ml Olive Oil
  •     Dill
  •     1 large onion
  •     250gr (.5 lb) chopped tomatoes (can be canned)
  •     1Kg (2 lb) Green Peas (can use frozen)

Directions

1. Rinse the peas in cold water and drain.

2. Chop the onion and sautee them in a sauce pan till golden.

3. Add the tomatoes, dill, pepper, salt and stir well.

4. Add about 150ml water and bring to a boil while stirring.

5. Reduce the heat to low and cook covered for 45 minutes.

Can serve hot or cold.

Meat with green beans - (Fasolakia me kreas)


NOTES

Greek : Φασολάκια με κρέας

Serves / Yields : 6 persons
Season:Spring,Summer,Autumn


INGREDIENTS
  • 1 kg meat (pork or beef), cut in portions
  • 1 kg green beans, cleaned (with the string removed)
  • 4 fresh tomatoes (mashed)
  • 1 medium onion, chopped
  • Salt
  • Pepper

METHOD
Roast the onion in the oil and add the beef. Add little water and cook in low temperature. When it is half cooked add the beans, tomatoes, salt and pepper and let it simmer. Beef should be tender and remaining sauce thick. To tenderize the meat you might need 2 - 3 hours. Serve hot.

Lamb with green beans - (Arni me fasolakia)


NOTES

Greek : Αρνί με φασολάκια
Serves / Yields : 4 - 6 persons
Season:Summer,Autumn


INGREDIENTS
  • 1 kg lamb
  • 1 kg green beans, wash and with their string removed (use frozen ones if you want to avoid the cleaning procedure)
  • 5 spoons olive oil
  • 1/2 kg finely chopped onions
  • parsley, finely chopped
  • 150 ml vegetable stock
  • Salt
  • Pepper

METHOD
Cut the meat in servings. Heat oil in a saucepan and saute the meat with the onions. Add salt, pepper and vegetable stock and simmer for 1,5 hour. Then add the green beans, the parsley and some more salt and simmer until the green beans are tender. During the whole cooking procedure you might need to add some exra water.

String bean salad - (Ampelofasoula)







NOTES

Greek : Αμπελοφάσουλα
Serves / Yields : 4 - 6 servings
Season:Spring,Summer


INGREDIENTS
  • 1,5 kg string beans
  • parsley
  • 2 cloves garlic
  • olive oil
  • vinegar
METHOD
Remove strings from beans. Wash the beans well. Boil them into salted water. When they become tender, drain them and serve them hot. Pour some olive oil and some vinegar and sprinkle the chopped garlic cloves and the parsley on top.

 INGREDIENTS


  • 2 potatoes
  • 1/2 kilo green beans
  • olive oil
  • garlic sauce (check relative recipe) 
 
METHOD

Boil the green beans and the potatoes. Put all the ingredients together and add olive oil and garlic sauce. Mix all together. Serve as is.
